Elevating Peoria’s taste buds through a fresh and fast drive-through format, Brushfire Tacos y Tapas celebrates grand opening June 8.

No longer do Peoria food lovers have to wait at a sit-down restaurant to get their hands on gourmet tacos and authentic Spanish-inspired tapas. Brushfire Tacos y Tapas will celebrate its opening day 11 a.m. with events beginning 1 to 4 p.m. June 8 in Peoria. Brushfire Tacos will be the first of its kind in the drive-through food industry, offering a selection of tapas, as well as a higher level of quality cuisine, all fresh food in a quick and convenient fashion. Among the modern take on grilled tacos and appetizing tapas, Brushfire’s menu will also offer a signature selection of five house-made salsas, traditional Mexican churros and espresso flan.

Residents won’t have any problems locating the drive-up/walk-up location on opening day. The grand event will be hosted at the angular building; distinguished by brightly colored repurposed shipping containers that create the drive up ambiance. As unique as the menu, Brushfire’s building design supports reuse of material into new uses and compact design, using only space that is needed and no more than that. The windows that line the length of the building allow customers to see their food made to order. Complete with an artistic roof design, the drive up and walk up location is hard to miss.

The name of the restaurant is intentionally named Brushfire Tacos y Tapas – named “Brushfire” after the former missionary foundation of owner, Clint Berkey. The flame shape over the letter “i” in the logo “Brushfire” can be seen as a dove, symbolizing aiding in the world taking flight. His purpose with Brushfire the restaurant, much like the purpose of his missionary voyage, is to help the world take flight. Berkey reminisces while speaking on his missionary background, “My journey has been driven by filling the spiritual and physical needs for others.” His truly successful work in changing lives in Latin America now fuels his plans to utilize Brushfire’s success in profit sharing, charitable works as well as global community building.

Berkey said, “Brushfire Tacos y Tapas will give something new and different to the Desert Southwest. We give the public great food with a personal connection that makes your day better. We want to give more than good food.”

The fast food model is expected to expand with locations all over the U.S. A substantial 51 percent of Brushfire’s profit is planned to go back to community and the world in which we live.

In celebrating the grand opening, all orders will come with a free churro and all flight orders will receive with a free taco card. Additional grand opening promotions will start 1 p.m., where the first 100 guests at the drive-thru and first 100 at walk up window will receive a free flight and free taco card with their purchase. Limited printed swag such as Brushfire hats and T-shirts will be available as well. Two winners will be chosen from a raffle to win free tacos for one year. One raffle will be available for entry on opening day and applicants can RSVP via Brushfire’s Facebook event and entered to win automatically. Both winners will be announced on opening day.
